Who says vegetables are boring? Here are 10 recipes that will convince you to switch favorites

Also not a very big fan of vegetable here, but I do love tasty vegetable dishes! I’ve been working from home for months now (OMG I miss the outside world!) that it came to a point when I got sick of my used-to-be favorite home-cooked dishes and fastfood eats. So I realized I gotta go try some new recipes and guess which diet I’m going to play with! Okay, hint’s on the heading and photo – I’m going to try these mouthwatering vegetable recipes I found from 10 of my favorite food and recipe blogs!

Eat your veggies, but don’t confine yourself to iceberg lettuce or salads! If I had more choices, I’d eat meat fish or junkfood instead of vegetables. But I have select favorites aside from salads – fried eggplant, pinakbet, chopsuey, lumpiang ubod, and many more.I’m kind of picky(er) when it comes to vegetable dishes but I’m not afraid to try. So let’s go through the vegetable recipe list and who know’s I could drag you to eating healthier as well! 

1. Cheesy Potato Casserole by Foxy Folksy

I personally have tried Foxy Folksy’s cooking and I wasn’t disappointed. I knew they’d make it on top recommended recipe blogs because not only they’re very good in telling their tasty cooking stories, their recipes are indeed delicious! So yeah, I’m telling this to friends and family as well, if you’re looking for recipes online, make Foxy Folsky’s your first (and only) source!

I’ve tried the usual potato casserole, but this cheesy version is a lot more interesting because HELLO, CHEESE! I’ve also tried different recipes (experimental recipes HAHA!) with potatoes and I loved each of them It’s like you’ll never fail with a potato in your cooking!

One usual challenge when you’re referring to recipes online is the accessibility of the ingredients especially now that we’re in an unusual situation because of COVID19. What’s super nice about this vegetable recipe is all the ingredients is accessible for me and I can copy exactly what the recipe tells me to do, and it’s easy! I really wish I can also achieve how Bebs did it!

Correct me if I’m wrong, but when I hear vegetable spring rolls I think about lumpiang sariwa/ubod. Lumpiang Sariwa is a Filipino dish with various meat and vegetables wrapped in egg crepe and it actually resembles your vegetable spring rolls but with different ingredients.

This vegetable recipe by Chungah consists of greens, carrots, cabbage, bell pepper, cucumber, and avocado so I have no troubles eating that (okay, maybe I’ll skip the cucumber). It’s also supposed to be served with peanut sauce which I haven’t tried yet, and like ever, but I will try it this time.

Since I’m working from home, my job for an hour actually tripled – being an auditor, a mom, and a blogger. I’m also taking risks opening business! So every minute of my everyday is too tiring but super busy, that some days I forget to eat lunch or at least have snacks. The reason why I chose this spring rolls recipe – to have a quick go-to, grab-and-go snack for at least a day or two.

 

Cauliflower + gnocchi. Do I even have to explain why I really, really want to try this?

Of course, because I have blank spaces in my blog (HAHA as if).   

I have more or less ten favorite vegetables that I’d eat no matter how you cook it. One of those is cauliflower. You say this is cauliflower? Okay, give me two servings of that.

I found this vegetable recipe from one of the blogs I usually visit, Pinch of Yum, which I first saw when I was looking for food business name ideas. Pinch of Yum is just so cute, I can’t steal it.

 

Yes! This is a no-meat burger! I am not a fan of black beans, I never have tried it, and I honestly didn’t expect myself to even think to try it. However, it sounds and looks so delicious (not to mention healthier than the usual big burgers I used to eat). I would probably upgrade with with more sauce to make it more tasty.

If you’re looking for a good and healthy alternative to lasagnas, say hello to this baked eggplant with parmesan. 

Ali’s blog is also one of my favorites because she’s perfect at making cooking sound easy and fun and a must-try. She looks for ways her visitors and readers could easily relate on her stories and magically convince them to try her vegetable recipe. Like one minute you’re just reading and imagining eating those things, the next minute you’re already at the market holding a list of ingredients you saw on her blog.

As mentioned, I love eggplant, and it’s actually my go-to breakfast as there’s eggplant everywhere in the market at any time. I love fried eggplant -simple and yummy -, steamed, mixed in an omelet, but I have never tried baked eggplant yet.

I don’t know i want to try a lot of baked stuff now that we got back our oven from a buried chest. Kidding.

These, I’m not sure if all of the ingredients are available at the local market, but I’m really interested to try both of these vegetable recipes out even with a very large tweak on the ingredients and recipe. Not sure if that makes sense, but I will definitely try to achieve something worthwhile inspired by these dishes! #ChallengeAccepted

What I like about this recipe is that it encourages you to “play with your herbs”. Choose your herb and get the flavor you are looking for. As a foodie, I loooove herb flavors, but I have no idea about it when it comes to cooking. How do you even know which herb if for what? Sheela said no matter which herb cmboo you use, your potato salad will turn out just great.

The flavors of this potato salad are inspired by the classic French salad Niçoise — without the eggs, olives, and tuna, of course, but with that punchy Dijon vinaigrette we all know and love.

This is no news for me! I’m been familiar with this recipe since I was a kid and I know my mothers’ version by heart. In our area, broccoli is super expensive compared to other vegetables, so it’s not really a go-to dish my mom cooks.

Wrap-up

We all know there are so much benefits to eating healthy food like fruits and vegetables. Growing up, I didn’t cry for my mom’s veggie dishes, but I like trying out different veggie meals she prepared. Good thing my kid likes fruits, but same with her mother, she’s not a lover of vegetables. We’re not limiting our diets, but maybe it’s just time to start the veggie journey together!
